White Wines.
Origin: Wine from Spain.
Wine: Remi number 2. White grapes blend. Spontaneous fermentation. No additions. No sulphites added. Not fined. Not filtered. Single edition.
Alcohol content: 11%.
Residual Sugar: No.
Production: 900 bottles (75 Cl).
Tasting notes: Apple, apricot, peach, pineapple, lychees, grapefruit, toasted almonds, lemon peel, creamy, fresh, long.
Pairings: Oysters, grilled fish, battered squid, pork tenderloin, baked potatoes, battered cauliflower, stuffed mushrooms, asparagus, apple pie, baked apple.
Vineyard: Giró Ros: 8-year-old vineyard located in the town of Llubí. North central area of ??Mallorca. White clay and calcareous soil. Organic farming. Trellis training. Flat land. The other varieties: 15-year-old vineyard located in the town of Pollensa, in the mountains. Northern area of ??Mallorca. Shallow, calcareous clay soil. Organic farming. Trellis training. Sloping terrain.

Harvest and wine making: All varieties hand harvested in 15 kilo boxes the second week of September.
Selection in the winery cluster by cluster, discarding leaves, small stones and any grapes that are not in good condition.
Destemmed, crushed and placed in a stainless steel tank, all varieties together.
Spontaneous fermentation (without any added yeast).
Without any addition, correction, or technological treatment.
After fermentation, a first racking is carried out, separating the thick lees.
After a few months with the fine lees, a second racking.
After a few months, third racking and adding 50% of Giró Ros wine from the same vintage.
Hand bottling by gravity, without transfer pumps. Unfiltered.
Hand capping and labeling.

Varieties: Giró Ros, Argamussa, Quigat, Montonico.

Vintage: 2023. Normal vintage. Long, cold winter. With two snowfalls in the mountains, the second on March 1st, which is unusual. Rain in spring. Normal summer, not excessively hot. Good health and quality of grapes in general.
