Harvest and wine making: Hand harvested in 15 kilo boxes the third week of September.
Selection in the winery cluster by cluster, discarding leaves, small stones and any grapes that are not in good condition.
Destemmed, pressed and must placed in a stainless steel tank.
Spontaneous fermentation (without any added yeast).
Without any addition, correction, or technological treatment.
Bottled at the end of fermentation with the wine still having a little natural carbon dioxide.
Hand bottled by gravity, without pumps. Unfiltered.
Hand capping and labeling.
Variety: Gargollassa 100%
Vintage: 2021. Normal vintage. Normal winter, with snow in the mountains. Rain in winter and spring. Short and not excessively hot summer. Year of generally low alcohol content, especially in some varieties and areas. Good health and quality of grapes in general.
