Description and features

White Wines.
Origin: Wine from Spain.
Wine: 100% Prensal. Mallorcan native variety. Spontaneous fermentation. Nothing added except minimal sulphite. Fermented in chestnut barrel. Not fined. Not filtered.
Alcohol content: 12,5%.
Residual Sugar: No.
Production: 1.300 bottles (75 Cl).
Tasting notes: Ripe pear, sweet potato, raw chestnut, anise, nutmeg, almonds, walnuts, light salty, creamy, intense flavor, long.
Pairings: Tuna, suckling pig, trout, mackerel, mullet, entrecote, grilled rabbit, chestnut puree, rabbit with onion, risotto, partridge, quail, vegetable stew, baked vagetables, lentil salad.
Vineyard: 9-year-old vineyard located in the town of Sencelles. North central area of Mallorca (Es Raiger). Deep, calcareous red clay soil (call vermell). Organic farming. Trellis training. Flat land.

Harvest and wine making: Hand harvested in 15 kilo boxes the first week of September.
Selection in the winery cluster by cluster, discarding leaves, small stones and any grapes that are not in good condition.
Destemming, pressing and must into a new 500 liter chestnut barrel.
Spontaneous fermentation (without any added yeast).
Without any addition, correction, or technological treatment.
After fermentation, a first transfer to a stainless steel tank separating the thick lees.
In the same barrel aged for two months of already fermented Prensal.
Then the two wines together in stainless steel tanks.
After a few months with the fine lees, a second racking.
After a few months, third racking adding 20 milligrams/liter of potassium metabisulfite.
Hand bottling by gravity, without transfer pumps. Unfiltered.
Hand capping and labeling.

Variety: Prensal 100%

Vintage: 2024. Strange vintage. Winter without snow in the mountains and cold only at times. Lack of rain in winter and spring. Drought year. In August, torrential and abundant rains in the eastern part of Mallorca (in some places up to 200 liters). Harvests in some cases advanced up to 2 weeks earlier than usual. Health and quality of the grapes good in general. Gradations and harvest times are very variable depending on each area and variety. Year of very low yield, obtaining up to 30% or 40% less must per kilo of grapes.
