Native variety of Mallorca. Of unknown origin and existing since ancient times. It has no relation to the variety that is called the same in the areas of the Spanish Levant, being different varieties. Medium cluster and medium grapes with medium thick skin. Loose cluster (not compact). Average production. Difficult to manage in the vineyard. Very sensitive to powdery mildew. It can produce a lot of sugar, reaching very high levels (14.5, 15 or more). The sugar content increases in a few days if the weather is hot, so harvesting at the right time is vital. Very little cultivated, with very few vines of this variety existing.
Very complex variety with aromas of dried tomato, carob, dried fig, paprika, black olive, roasted pepper, geranium, beet, fig leaf, dried mushroom (shiitake), black garlic, pepper, giving wines with a lot of structure, deep, intense, complex and long.
Wines made 100% with Giró Negre have been non-existent except for those made by Selva Vins. It seems that now some wineries are daring to do it.
